Instant Pot Beef Stew

Today, we had our first snow of the season here in South East Missouri. Lucky for me I had this Instant Pot Beef Stew on my menu for today, because it was perfect stew weather.  I hope you love this recipe as much as I did. If you don’t have a Instant Pot, you can make this in the Crockpot as well.

Ingredients:

 -1 Tablespoon Butter

-1 lb Grass Fed Beef Stew Meat

-1 TSP Pink Himalayan Salt

 -1/2 Cup Almond Flour
-1 Yellow  Onion Diced (I use dry onion)

-4 Carrots, Diced

-2 Celery Stocks, Diced

-3 Potatoes, Diced

-4 Garlic Cloves, minced

-3 Cups Beef Broth

-1 Can Diced Tomatoes

-2 TSP Thyme

-1 TSP Ground Pepper

1.Turn the Instant Pot to saute for 10 minutes.

2. While the Instant Pot is heating up, toss the stew meat and the almond flour in a mixing bowl and stir to coat the stew meat with the almond flour.

3. Add the butter to the Instant Pot, when the butter is completely melted, add the stew meat and brown on both sides , stir occasionally. (Please make sure the butter is melted completely or the almond flour will burn to the bottom of the Instant Pot)  

4 When the stew meat is browned, add the remaining ingredients to the Instant Pot.

5. Seal the lid, and select the Meat/Stew option and set the time for 25 Minutes.

6. After  it’s done cooking let the pressure release naturally for 5 minutes, then use the quick release. 

This is great for make ahead meal prep!
