Fall is one of my favorite seasons! I love all things pumpkin. I love coffee shop pumpkin lattes, in fact, I haven’t met a pumpkin latte I haven’t liked. Are some better than others? Sure, but they are all delicious. However, hitting up a coffee shop everyday wouldn’t help my waist line or my bank account. So, I decided to create a Pumpkin Latte of my own.

Ingredients Include:

-8 ounces of brewed coffee

-1/2 cup canned coconut milk

-1/4 cup canned pumpkin

-1 TBS honey

-1/2 tsp pumpkin spice

Froth Ingredients:

-1/4 cup of heavy whipping cream

-5 drops of liquid vanilla Stevia

-1 scoop of collagen (this is optional, I use the collagen for the health benefits)

Mix the coffee, coconut milk, canned pumpkin, honey and pumpkin spice together in the blender, then poor into your favorite fall coffee mug. 

You’ll want to put the heavy whipping cream into a microwave safe mug and heat for 60 seconds. Then, add the 5 drops of liquid Stevia and collagen and froth for 30 seconds. 

Poor the frothed milk on top of the coffee. I like to sprinkle some pumpkin spice on the top of the frothed milk.
